The Myth of Macarons

I was planning on making some macarons later in the week for a bake sale benefiting Japan, when I happened to come across this article today, Macaron Mythbusters. So many websites and books out there will tell you how fussy macarons are. I totally believed them. Maybe not all of it, but I really did think you had to age your egg whites a bit, and you had to dry your macarons out before baking them. Well, maybe macarons aren’t so fussy after all!
